What does tolu balsam smell like?

Tolu balsam is warmer and spicier than Siam benzoin, with a top note some describers compare to hyacinth or cinnamon before it settles into a sweet, balsamic base. This comes from a higher relative share of cinnamic acid and its esters, layered over benzoic acid and traces of vanillin.

Fresh tolu balsam is also noticeably softer than benzoin - closer to a thick, sticky syrup than a brittle tear - and this physical stickiness carries a slightly resinous, almost toffee-like richness that dry benzoin tears lack. How each balsam is harvested

Benzoin is collected by deliberately wounding the bark of a Styrax tree, which triggers the tree to seal the injury with a gummy exudate.
