We Aged Benzoin for a Year Four Ways: What Changed

A year-long comparison of Siam benzoin stored sealed and dark, in sunlight, in humidity, and as a tincture, tracking colour, hardness and scent.

A year-long comparison of Siam benzoin stored sealed and dark, in sunlight, in humidity, and as a tincture, tracking colour, hardness and scent. Not reliably. Sealed and kept cool and dark, benzoin changes very little over a year and holds its balsamic-vanilla character well. Left in light, heat or humidity, it hardens, darkens and loses its brighter top notes faster than it gains anything in return, so ageing is closer to slow decline than improvement. In our year-long comparison, a 20% ethanol tincture kept its scent and colour more consistently than any of the solid storage conditions, including sealed dark resin. Alcohol slows oxidation and there is no surface exposed to air the way there is with lumps or powder in a jar.

Benzoin aged for a year changes most in three ways: it darkens and hardens as its surface oxidizes, its brighter top notes fade, and a sharper, more acidic edge emerges as esters like coniferyl benzoate slowly hydrolyse into free benzoic and cinnamic acid. How much of this happens depends almost entirely on storage. In a sealed, dark, cool jar, a year does comparatively little damage. Left in sunlight, warmth or humidity, the same resin can lose much of its balsamic-vanilla lift within months. A 20% ethanol tincture, by contrast, held its character better than any solid storage method we tried. None of the four conditions made the resin smell noticeably better after a year; the best outcome was simply the least change.

The experiment: four conditions, one batch, twelve months

We started with a single batch of Siam benzoin almonds, sourced as one lot to remove origin as a variable, and split it into four portions in early autumn:

  • Sealed and dark — whole almonds in an airtight amber glass jar, in a cupboard away from heat sources.
  • Light-exposed — the same almonds in a clear glass jar on a windowsill that gets several hours of direct sun a day.
  • Warm and humid — whole almonds in a loosely closed paper bag, kept in a bathroom cabinet with regular temperature and humidity swings.
  • Tincture — resin dissolved to roughly 20% by weight in 95% ethanol, in a dark glass bottle at room temperature, following the ratios described in how to tincture resins for perfumery.

We reopened all four at the same time, a year later, and compared them against a small reference sample of the original resin that had been kept frozen and sealed since day one.

What does aged benzoin smell like after a year?

The sealed, dark sample was the closest to the frozen reference: still recognisably sweet, vanillic and balsamic, with only a slight loss of the fresher, almost floral top note that fresh Siam benzoin has when first broken open. This matches the general profile described in what does benzoin smell like — the core character is stable, but the most volatile fraction is the first to go regardless of conditions.

The light-exposed jar had visibly darkened from pale amber to a deeper honey-brown, and the scent had thinned. The initial sweetness was still there on first opening, but it faded within minutes rather than sitting for an hour, and underneath it was a faint sharpness that read as slightly acidic rather than resinous.

The warm, humid sample changed the most. The almonds had softened at the edges, some had partly fused together, and the smell had shifted furthest from the reference: less vanilla, more of a flat, waxy-acidic note with little of the original lift.

The tincture smelled closest to fresh benzoin of all four, though slightly darker in colour than when it was made. Alcohol slows the oxidative surface reactions that affect solid resin, and there is no exposed solid surface for oxygen to act on the way there is with lumps or powder.

The chemistry behind the change

Siam benzoin’s sweetness comes largely from coniferyl benzoate, alongside smaller amounts of vanillin and benzaldehyde, as covered in more detail in benzoin chemistry. Over time, and faster with heat, light or moisture, these esters hydrolyse into their component acid and alcohol. The result is more free benzoic acid, which has a sharper, more astringent smell than the ester it came from. Surface oxidation also darkens the resin and, eventually, stiffens it as smaller aromatic molecules cross-link and evaporate, leaving a harder, less fragrant mass behind.

Sumatra benzoin, which leans more heavily on benzyl benzoate and cinnamic esters, follows a broadly similar pattern, though we did not run a parallel Sumatra batch in this test; the general storage guidance in how to store resins applies to both.

Does tincturing protect benzoin better than storing it whole?

In this comparison, yes. The tincture was the most stable of the four samples by smell, even though it started from the same resin as the others. What this means for buying and storing benzoin

None of this means benzoin is fragile. Even the worst-treated sample, a year in a humid bathroom cabinet, was still usable and still recognisably benzoin, just duller. If you burn or use benzoin occasionally, a sealed, dark, cool jar is enough to keep a batch in good condition for a year or more. If you want the resin to stay as close as possible to fresh, tincturing it early is the more reliable route, and it has the added benefit of being ready to use in perfumery or tincture-based work immediately rather than needing to be dissolved later.

The one condition to avoid, on this evidence, is exactly the one that is easiest to fall into by accident: a clear jar on a windowsill, or a paper bag in a warm, damp cupboard. Both are common ways people store resin without thinking about it, and both did more damage in a year than deliberate cold, dark, airtight storage did.
